It represents a new entry among the best Michelin-starred restaurants in Rome. We are talking about IDYLIO BY APREDA, hosted in the elegant The Pantheon Iconic Rome Hotel. Francesco Apreda, one of the most gifted talents of the Italian culinary school, has created a gourmet enclave. The palate will gasp when tasting the Jerusalem artichoke and salted anchovy velouté, or the cacio, pepper and seed risotto. And what about the now famous chicken “in two cultures”? Three taste journeys are possible, characterized by obvious Asian influences to embrace Italian cuisine. The price for the menu ranges from €120 to €420 for New Year’s Eve dinner.

Il Pagliaccio (2 Michelin stars)

In the heart of Rome, exactly on Via dei Banchi Vecchi, a very short distance from the Tiber, providing excitement at the table since 2003 is the restaurant Il Pagliaccio. Over the years, Italian-born French chef Anthony Genovese has been able to renew himself, putting his heart and soul into the project. Diners, welcomed in a setting evocative of the 1960s, have the opportunity to choose one of three proposed tasting courses: Circus, Charivari and Intermezzo, featuring dishes with an oriental contamination. Accompanying them is a wine cellar consisting of more than 1,300 labels. Menu prices vary depending on the number of courses desired from 85€ to 185€.

La Pergola (3 Michelin stars)

It is no exaggeration to call La Pergola, a convenient Michelin-starred restaurant, a sacred temple of gastronomy. On the other hand, Heinz Beck’s name evokes certainty. The restaurant, located in the Hotel dei Cavalieri, offers a tasting menu consisting of 11 courses. Protagonists are small masterpieces of culinary art, such as lobster on burnt spring onion emulsion and grape molasses. Also unforgettable are the veal sweetbreads with red fruits and basil. Adding even more prestige to the room is the panorama, over which the dome of St. Peter’s stands out. The 9-course tasting menu costs €210 if the truffle surcharge is excluded.

Convivio Troiani (1 Michelin star)

They left the Marche region arriving in the capital to pursue their dreams. At the end of the journey, the three Troiani brothers founded Convivio Troiani. The restaurant grew quickly, earning a Michelin star just three years after opening. Pivotal elements are raw materials, supported by small local businesses, innovation and the desire to always put oneself out there. Convivio Troiani’s clientele loves typical dishes, such as “ajo e ojo” pasta and Roman-style tripe, here in a revamped version. Famous are the spaghetti aglio, olio, gamberi, pecorino and mint. The price range here is from €85 to €125.

A dinner hosted by a terrace overlooking the Colosseum? The choice can only come down to Aroma, on the top floor of the 5-star Palazzo Manfredi hotel. Chef Giuseppe Iorio has designed a restaurant perfect for an evening of romance. The three tasting menus are a confirmation of Iorio’s desire to innovate. If time for the meal is short, here are the “quick and chic” proposals. Highlights include the eggplant and zucchini millefeuille with ricotta mantecata gratin with Parmesan cheese. The average receipt for classic tasting is around 180€.

A name that is a whole program: Acquolina. In the heart of Rome, in the Hotel First Roma Arte, the Michelin-starred, value-priced restaurant gives ample prominence to the creativity of chef Daniele Lippi, who is committed to bringing the bounty of the local seafood to the table through three different tasting courses. The “Ab Origine” 6-course itinerary featuring indigenous flavors is flanked by the 7-course “Periplo” and “Anabasi-Catabasi” with as many as 9 courses. Advice? Be tempted by tuna ventricina presented in a tantalizing version. Tasting at the venue ranges in price from €120 to €170.

It shares its name with the Museum of Modern Art in New York. And indeed, even at one of the best Michelin-starred restaurants in Rome, it is works of art–but gastronomic ones–that enchant. It is spread over two levels. In the bistro, the atmosphere is lively, the food proposal simple and tasty. The second floor, however, is dedicated to gourmet cuisine. The trump card? The raw materials of small producers active in the area. Here then are seasonal offerings appearing on the menu, made even more tantalizing by wild herbs. The menu is a la carte and includes two tastings for €65 or €85.

Marco Martini Restaurant (1 Michelin Star)

He has called himself “the supernova of gourmet cuisine”-he is Marco Martini, star chef of the restaurant that bears his name. The venue welcomes guests around tables set in the winter garden, beautifully nestled in the San Saba neighborhood. “Romanissimo” dishes appear on the menu, from white mortadella and pistachio tortello to flavorful rigatoni with tail sauce. There is no shortage of proposals designed to surprise, for example, fettuccine stuffed with zucchini scapece. Marco Martini knows how to win over every palate for a price appropriate to the sought-after offer, around 170€ per person.

Trastevere represents one of the most vibrant neighborhoods in the capital. One of Rome’s most famous starred restaurants is located here: Glass Hostaria. Haute cuisine in a modern-designed environment, in an area full of trattorias: it was Apulian chef Cristina Bowerman–raised professionally in the United States–who was the wizard in the kitchen. An original menu with a broad international scope, black linguine with Juncu “cacio” and sea urchins is one of Glass Hostaria’s most beloved dishes. The price per person ranges from 75€ classic to 250€ for the Christmas menu.

At the helm of the All’Oro restaurant, located inside The H’All Tailor hotel, is Riccardo di Giacinto. The chef’s desire was to present diners with creative cuisine that was, at the same time, sincere and mouthwatering. It is easy to be tempted by its dishes, to be savored cheered by a New York-designed room. As spring arrives, the restaurant offers a delightful outdoor space “All’Aria.” Tasting one of the offerings from the wine selection will tickle the palate before a dinner party, or enhance the dishes.
